In Southern Mexico, chicken and vegetables are found in many dishes along with unique ingredients such as the Poblano Pepper, which comes from Puebla- one of Mexico’s largest cities.
In Northern Mexico, barbecues are common and many dishes feature beef and other meats (carne asada) as heroes. The home of the Fajita is also Northern Mexico- originating in the 1930s on cattle ranches.
